Diwali Sweets and the Javitri Magic

My first attempt at kaju katli was — let's be honest — a disaster. Grainy, flat, and about as festive as cardboard. My mother-in-law tasted it, said nothing, and quietly opened her masala dabba.

Inside was a small compartment I'd never paid attention to: dried javitri, the lacy red covering of nutmeg. She crushed a single strand into the mawa while it cooked down.

A little goes a very long way

Javitri is potent — one strand can perfume an entire batch. Too much and your sweet tastes medicinal instead of magical. She showed me exactly how much: barely a pinch, added right at the end so the aroma doesn't cook off.

That Diwali, my kaju katli disappeared off the plate before the diyas were even lit. Nobody asked for the recipe. They asked what the secret ingredient was.

"Javitri," I told them, "and a mother-in-law who didn't give up on me."
