How Dalchini Saved My First Biryani

I decided to cook biryani for my in-laws' first visit. Bold move for someone who'd never made it before. Forty minutes in, the rice was mushy, the meat was bland, and I was one step from ordering takeout and pretending.
I called Ammi in a panic. Her first question wasn't about the meat or the rice.
"Dalchini daala?" Did you add cinnamon?
The stick, not the powder
She made me check — a whole stick, not ground, simmered with the meat from the very start, not sprinkled on top at the end like I'd done. Whole dalchini releases its oils slowly through the entire cook, building warmth layer by layer instead of one sharp burst of flavour.
I added a stick to the half-cooked pot, extended the dum by fifteen minutes, and prayed.
It worked. My father-in-law asked for a second helping. I still haven't told him how close that biryani came to becoming a phone call to the pizza place instead.
