The Cardamom Chai That Started It All

In my first year of college, our hostel stove had exactly one working burner and a permanent layer of turmeric stain. My roommate Aakash made chai on it every single night, and I never once saw him use a recipe.
"Elaichi first," he'd say, "always first." He'd crush two pods between his thumb and the back of a spoon — not powder, just cracked open — and drop them into cold water with the tea leaves before the flame even started.
Why crush, not grind
Ground cardamom burns bitter fast. Cracked pods release their oil slowly, so by the time the milk goes in, the whole room smells like a wedding.
We drank that chai through breakups, backlogs, and one legendary all-nighter before a chemistry final neither of us passed. Years later, cardamom is still the smell of feeling okay when nothing else was.
Good chai isn't rushed. Neither is a friendship worth keeping.
